veggie flatbread

ingredients

1 round flatbread, cut in 2

1 avocado, sliced

2 Happy Eggs

75g sweetcorn

4 red and 4 yellow cherry tomatoes, halved

1 green and 1 yellow bell peppers

2 tbsp natural yoghurt

1 tbsp fresh flat parsley chopped

A pinch of paprika

A squeeze of lime juice

method

  1. Heat some oil in a frying pan on a medium heat. Heat flatbread pieces for 2 minutes on each side.
  2. Take the bread off the heat. Crack 2 Happy Eggs into the same pan and fry both.
  3. Place the peppers on a griddle pan and leave them until they start to char.
  4. Top your flatbread with all of the cooked and remaining ingredients.
  5. Serve and enjoy!
