Turkish Happy Eggs

Ingredients

  1. 300g Greek yogurt
  2. Fresh dill, chopped
  3. Fresh mint leaves, chopped
  4. 3 garlic cloves, crushed 
  5. 4 medium eggs
  6. 30g melted butter
  7. 1 tsp chilli flakes
  8. 1 teaspoon smoked paprika
  9. Salt and pepper to taste
  10. Pitta bread to serve

 

Method

  • In a bowl, combine the chopped dill, mint and crushed garlic with Greek yogurt. Season with salt and pepper.
  • Melt the butter on a pan, add the chili and smoked paprika. Stir well until combined.
  • Bring a medium pan with water to a boil. Use your favourite method to poach your eggs (Janey uses the cling film method as shown in the video on our Instagram reel). Boil the eggs for around 3-5 minutes to get that runny yolk.
  • Distribute the yogurt mixture evenly between two plates. Place the poached eggs on top and pour the chilli sauce on top.
  • Serve with some fresh pitta bread.
