Soft Boiled Happy Eggs and Soldiers

The perfect breakfast for egg fans big and small.

This is our dummyproof method for perfectly ooey-gooey eggs that are just desperate to be dipped.


1-2 Happy Eggs per person

2 slices of sourdough bread per person


Salt & pepper to taste


  1. Bring a pan of water to a gentle rolling boil
  2. Slowly lower in your room temperature eggs
  3. Set a timer to 5 minutes, and pop your toast on for 1-2mins
  4. Once the toast pops, slather with butter and slice into soldiers
  5. Gently remove your eggs at 5 minutes and top them
  6. Season with salt & pepper, then get dipping!
