Pain Au Chocolat Pancakes

These pancakes are the best of sweet treats from both America and France. Fluffy American pancakes laced with pain au chocolat chunks with chocolate sauce, chocolate shavings and crumbled pastry.


For the American pancake batter

– 2 tbsp caster sugar
– 1 tsp bicarbonate of soda
– 2 tsp baking powder
– 140g plain flour
– 30g cocoa powder
– 2 large eggs
– 1 tsp vanilla extract
– 150ml milk
– 1 pain au chocolat roughly torn into small pieces
– 70g chocolate chips
– Butter for the pan
– Chocolate sauce to drizzle as cooking

To serve
– Chocolate sauce to drizzle
– 50g dark chocolate shavings
– 1 pain au chocolat roughly torn into small pieces
– 1 tbsp orange zest


1. Add the caster sugar to a large mixing bowl and sift in the bicarbonate of soda, baking powder, plain flour and cocoa powder.
2. Make a well in the centre and crack in your Happy eggs followed by vanilla extract and use a fork to gently beat. As you beat, slowly add the milk bit by bit until a smooth, thick batter forms. Gently stir through the pain au chocolate and chocolate chips.
3. Heat a non-stick frying pan over medium heat and add a knob of butter. Allow the butter to melt and then add a ladle of batter to the centre of the pan. Drizzle a little choc sauce on top of the batter Jackson Pollock style.
4. Once the top of the pancake begins to bubble you know it’s ready to flip. Cook for a minute or two on the second side, pop on a plate and repeat.
5. Now it’s time to create your masterpiece. Layer the pancakes on top of one another and sprinkle with chocolate, pain au chocolat pieces and orange zest followed by a healthy drizzle of chocolate sauce.

6. Enjoy with a hot coffee and imagine you are sat outside a patisserie in Paris.
