These croissants have officially had the royal treatment! All of the traditional flavours of ‘Eggs Royale’ served in a not so traditional way! Croissants baked in an eggy, cheesy mix with spinach and chives and topped with ribbons of smoked salmon for a little extra decadence this Christmas.
Butter to grease oven dish
4 Large Happy Eggs
3 tbsp Dijon mustard
300ml whole milk
100ml single cream
Small bunch of chives chopped (set aside some to sprinkle on top)
80g spinach roughly chopped
100g Extra Mature Cheddar grated
200g smoked salmon
1. Pre-heat the oven to gas 4, 180°C, fan 160°C. Grease a large oven dish all over with butter to stop the croissants sticking and lay your croissants in a single layer.
2. Whisk the Happy Eggs, mustard, whole milk, single cream, chives and spinach in a bowl, season and pour over the croissants. Sprinkle with Cheddar and pop in the oven for 20 mins.
3. Once the cheese is golden and bubbling, top with ribbons of decadent salmon followed by a sprinkle of chives.
4. And there you have it- a royal breakfast in just 4 steps. Perfectly accompanied by a glass of whatever strikes your fancy!
