Happy Egg White Menemen

A  Turkish recipe which uses Egg Whites.

This healthy dish is composed of veggie-packed scrambled egg whites. Add a hum of chilli and a grating of halloumi and you’re all set!


1 tbsp olive oil 

1 red onion, finely chopped 

½ red pepper, finely chopped 

2 tomatoes, finely chopped 

½ tsp Turkish pepper flakes 

100g Egg Whites 

A handful of roughly chopped coriander leaves  

Halloumi to serve (10-20g)

Sea salt


  1. Heat the oil in a non-stick frying pan over medium heat. Throw in a finely chopped onion and pepper and cook, stirring occasionally, for 5-6 minutes until soft. 
  2. Put the tomatoes, pepper flakes and a small pinch of salt into the pan. Mix well and cook, stirring occasionally, for 2-3 minutes or until the tomatoes have broken down. 
  3. Pour the egg whites into the pan and mix well. Cook, stirring occasionally, for 1-2 minutes or until set. Add the coriander. Mix well and divide between two serving plates. Using a fine grater, grate a little halloumi over each plate and serve immediately.
