Classic Happy Crepes

An ideal alternative weekend breakfast.

We’re using a super simple recipe to create an indulgent brunch bursting with fresh berries and zingy mint.


100g plain flour

2 happy eggs

300ml milk

1 tbsp melted butter, plus a little extra for frying

Mixed frozen berries


Crème fraîche

Fresh berries

Flaked almond

1 tbsp honey or sugar



  1. Add 100g plain flour, 2 happy eggs, 300ml milk and1 tbsp melted butter in a bowl, then whisk to form a smooth batter
  2. Set aside for half an hour to rest if you have the time
  3. Meanwhile, add the frozen berries and honey/sugar on a low heat in a non-stick saucepan to create a quick compote
  4. On a medium heat, warm a mid-sized saucepan and sweep some butter over the surface
  5. Once it’s hot, add some batter and cook for about a minute til you see bubbles on top, then gently flip and do the same on the other side
  6. Keep them warm in the oven til you’re ready to serve
  7. Lazily fold and drizzle with your warm compote, crème fraîche, berries, flaked almonds and mint for a brilliant brunch
