Packed full of Happy Eggs and avocado which are both great sources of healthy protein and fat, so this burrito will keep you full of energy and satisfied until lunchtime. And that’s what you want from a good breakfast, right?
3 large soft tortilla wraps
1-2 tablespoons of butter
1 large ripe avocado
1 can of black beans in water, drained
Cherry tomatoes, halved
Red cabbage, shredded
Charred red bell pepper, cut in strips
Fresh baby spinach
Salt and pepper
First prepare all your vegetables for the burritos. Char the red bell pepper on a pan for about 5 minutes and cut into strips.
Next, make the scrambled eggs. Crack the eggs into a big bowl and whisk vigorously until combined. Season with salt and pepper. Pour the mixture into a hot pan containing melted butter (about 1-2 tablespoons). Turn the heat down to medium-low. Let the mixture sit without stirring for about half a minute. Stir the eggs as they cook and start to create small, soft curds. Stir continuously until eggs are softly set and creamy. Remove from the heat and leave for a moment to finish cooking.
Warm the tortilla wrap on a pan before distributing the fillings.
Assemble your tortillas.
Start with evenly distributing the spinach and shredded red cabbage. Continue with thin narrow strips of the following; avocado, halved cherry tomatoes, beans, scrambled eggs, charred red pepper and coriander.
Season with salt and pepper and squeeze some lime juice on top. Roll the tortilla as you see in the recipe video on Instagram.
Just before serving you can heat the burrito on a pan (optional).
Cut in half and enjoy!
