mother’s day treats

Hi guys,
Don’t forget that it’s Mother’s Day this Sunday – my kids keep reminding me that we need to make something special and cupcakes are the perfect solution. They’re fun and easy to make and there’s always plenty to go round. So here’s a perfect recipe for baking with the kids this weekend to say thank you to Mum or Grandma.
Mat
Cupcakes
Makes 12 cupcakes
Ingredients:
For the cupcakes:
100g softened butter
100g caster sugar
½ tsp flavouring eg. vanilla extract
2 medium happy eggs
100g self raising flour
For the buttercream:
½ cup unsalted butter
4 cups icing sugar
Pinch of salt
1/3 cup milk
1 tsp flavouring eg. rose, violet extract or lemon juice
Method:
For the cupcakes:
Mix the butter, sugar and flavouring together until light and fluffy. Mix the eggs together in a separate bowl, then slowly add to the butter mixture (if the mixture starts to curdle, add a tbsp flour).
Fold in the rest of the flour until it has an even consistency (if the mixture won’t drop off the spoon, it’s too thick, so add a little warm water).
Place a spoonful into each paper cupcake case (it should be filled to approx 2/3) and bake in an oven at 180˚C/350˚F/Gas Mark 4 for 10-12 minutes until golden brown on top.
Remove from the oven and cool on a rack. Decorate by piping a buttercream on top
For the buttercream:
Mix the butter until it becomes a smooth paste. Add the icing sugar, salt, milk and flavouring and whisk until smooth and creamy

Can I just say a massive thank you to the amzagnily talented Tara. She is just as nice as the cupcakes she makes. My hen party was good but the cupcakes made my weekend. The ladies loved the cupcakes & thought they were the nicest they have ever tasted. There already looking forward to having more at my wedding party.
